Rojak with Sambal Pecal for Iftar

Eat with Sambal Pecal
It was second day of Ramadan and everything went well so far for us. We had Sambal Pecal for our Iftar(refers to the evening meal when Muslims break their fast at the time of sunset, right at the time of maghrib adhan before Maghrib prayer, during the Islamic month of Ramadan). In month of Ramadan, we will try to prepare simple meal for Iftar and to avoid waste.

Sambal Pecal is best to eat with mix of items such as Tempe, Potato, Cucumber, Hard boil egg, Tofu, Green Chili, and Pucuk Ubi (cassava shoots). The mix of items also known as Rojak. We were out by few items but that never stop us from enjoying the Sambal Pecal.

So to prepare your Sambal Pecal just follow the instruction below;

Ingredients:
200g ground peanut
3-5 dried chili
5 shallots
3 Garlic
1 tablespoon dried shrimp or 1 inch Belacan
Tamarind
3-4 tablespoons sugar
Salt to taste

How to:
Saute ground peanut, and once sauteed put aside and remove skin as much as possible. Then saute dried chili, shallots, garlic and dried shrimp or Belacan. Then, in a blender, grind them together with skinless ground peanut. Finally add sugar and salt.

Prepare tamarind juice by diluting the tamarind into hot water and make sure to produce a very thin tamarind juice. In a bowl, add the tamarind juice into the blended items above to make your Sambal Pecal.
