Siakap Kukus / Steamed Sea bas


I went to a fresh market nearby looking for fresh wild sea Siakap / Sea bass. Unlucky for me, all wild Siakap sold out already. Wild Siakap usually priced from RM20 to RM25 per kilogram.  The taste of wild Siakap is the best, unfortunately very hard to get. The one that I bought and steamed in light soy sauce above is Siakap from sea cage farming and only cost me RM15 per kilogram.

Anyway, the steps are as below;

Ingredients : Fish

A fresh Siakap
One inch ginger (sliced)
Spring Onion
2 pieces of turmeric leaves
2 tablespoon of Light Soy Sauce

Ingredients : Sauce

Sweet Soy Sauce (Habhal)
2 red chili*
2 birdeye chili*
3 shallots*
2 calamanci

As per image above, put all the ingredients ie Siakap, ginger, spring onion in a steamer. Pour light soy sauce onto Siakap and steam for about 10-15 minutes.

To make the sauce, finely chopped all the asterisk ingredients and put into a small bowl. Add sweet soy sauce (3-4 tablespoons) and finally squeeze in the calamansi.
