Almond and Blueberry Muffins

Again, it wasn’t me who baked the Almond and Blueberry Muffins. It was a project between mom and daughter. She is only 2 and half years but her contribution to this project was essential. How? She was the one who ask for her mom to bake the muffin.

“Ayah , muffin!. Nanti buy shop OK!” said the little one and it’s just enough for me to understand what she was asking for. “Go and ask Ibu” said Ayah. “Ibu, ibu I want a muffin please” said the little one.

“Yeah, I think it good for you to make the muffins today. Otherwise she keeps asking to buy it from shop and I don’t like it because it’s too much sugar on it” said Ayah; smiling knowing that there will be a fresh muffin for tea time.

A muffin can’t be considered as a Malaysian food. However, I decided to share anything cooked or baked by us and that we also think will give benefit to our readers. But the authentic simple Malaysian recipes will always be the priority.

For those who want to try, this is the easy one. Just follow the simple steps below and I’m sure you will get the same result.

Ingredients:
3 eggs
150ml fresh cream
150g caster sugar
50g finely ground almonds
175g plain flour
11/2 teaspoons baking powder
125g blueberries
15g Almonds, chopped

How to:
1. In a bowl, whisk eggs, fresh cream, sugar until smooth.
2. In the same bowl, add ground almonds, flour and baking powder and mix them together.
3. Using a spoon, scoop the mixture in to paper cake cases. Estimate 12 cases for this mixture.
4. Evenly add blueberries and sprinkle the chopped almonds before put into a oven.
5. Bake them in a preheated oven (180 C) for about 25-30 minutes.

  1. Hmm... looking so delicious and i am sure that they are easy to make as the recipe is there. I really like to eat sweet things especially muffins that taste's good and are easy to make. Hopefully when i make them on my own they are going to taste good and looks as same as in the picture. Thanks for the post...

  3. i think Preservatives in muffin mixes led to the expectation that muffins did not have to go stale within hours of baking, but the resulting muffins will not a taste improvement over homemade.what do u think about it ?

    I like the fact that it is not your typical vanilla, chocolate or cornmeal muffin.

    But I do not know what Caster Sugar is.

    Can you or any of your readers help me out? Does Caster Sugar have another name?

    Caster sugar is a very fine sugar sold in Britain and Ireland.

  12. Ok great thank you for the link. For the rest of your readers here is the definition of Castor Sugar:
    Castor or caster sugar is the name of a very fine sugar in Britain, so named because the grains are small enough to fit though a sugar "caster" or sprinkler. It is sold as "superfine" sugar in the United States.

    So It is super fine sugar but NOT as fine as confectioners sugar!

  16. Wow this is a really healthy recipe! Almonds are perfect for increasing your metabolism, while the blueberries contain a large variety of vital nutrients.

  18. I saw pictures of gorgeous blueberry muffins from Stick to Your Hips almost a year ago. I thought they were some of the most beautiful muffins I'd ever seen. I absolutely loved the big plump blueberries that decorated the top of the muffins.
