Sambal Goreng Tofu Tempe

It’s been a while since my last blog post on Selera Malaysia. And for that reason I think I owe an apology to all my blog readers. So, my next recipe is called ‘Sambal Goreng’. This was introduced by my mother when I was only seven and since then, ‘Sambal Goreng’ is always being on my favourite food list.

It is a combination of fried bean curd (tofu), Tempe (from soybean), shrimp and long beans. Please find below the instructions for you to follow:

Ingredients:
8 dried chilies*
8 cloves of shallot*
1 inch of galangal*
5 lemon grass*
1 cup of Tempe (small diced)**
1 cup of Tofu (small diced)**
¼ kg small shrimp**
4 fresh red chilies (sliced)**
10 long beans (sliced)
½ cup fried shallot
¾ cup of tamarind juice
100ml of coconut milk
Salt and sugar to taste.

**to fry until ¾ cook.

How to:
Blend all single asterisk* ingredients and sautéed until fragrant. Add tamarind juice. Then add long beans and stir to cook. Add coconut milk, salt and sugar. Continue to stir until boil. Finally add all double asterisks** ingredients and fried shallots. Stir to mix them well.
